  1. 2.5 lbs. chopped rhubarb stalks
  2. 2 cups sugar
  3. 2 tsp orange zest
  4. 1/3 cup Orange Juice
  5. 1/2 cup water
  1. Combine all of the ingredients in a saucepan and bring to a boil.
  2. Cook over medium-low heat for about 45 minutes, stirring occasionally, until thick.
  3. Jam will thicken more as it cools.
  4. Ladle into sterile containers and store in the refrigerator or freezer until ready to use.
