Ingredients
  1. 30 oz corn kernels
  2. 6 scallions, diced
  3. 15 cherry tomatoes, diced
  4. 2 cans of black beans, drained
  5. 2 ripe avocados, diced
  6. 1 large red onion, diced
  7. balsamic vinegar to taste
  8. olive oil to taste
  9. 1/2 tsp salt
Instructions
  1. Mix all ingredients together in a bowl and serve with nachos or pitas.
