Corn, Pepper, Black Bean & Couscous Salad

Corn, Pepper, Black Bean & Couscous Salad

Ingredients
  1. 1 cup uncooked couscous
  2. 1 1/4 cups broth
  3. 3 Tbsp extra virgin olive oil
  4. 2 Tbsp fresh lime juice
  5. 1 tsp red wine vinegar
  6. 1/2 tsp ground cumin
  7. 8 Sycamore Farms scallions, chopped
  8. 1 Sycamore Farms red bell pepper, chopped
  9. 1/4 cup Sycamore Farms cilantro, chopped
  10. 1 cup Sycamore Farms corn kernels
  11. 2 cans black beans, 15 oz each, rinsed and drained
Instructions
  1. Bring broth to a boil in a 2 quart saucepan and stir in couscous.
  2. Cover pot and remove from heat. Let stand 5 minutes.
  3. In a large bowl, whisk together olive oil, lime juice, vinegar, and cumin.
  4. Add scallions, pepper, cilantro, corn, and beans.
  5. Toss to coat.
  6. Fluff the couscous well, breaking up any chunks. Add to the bowl with the vegetables and mix well.
  7. Season with salt and pepper to taste.
  8. Serve immediately or refrigerate up to 3 days.
